russian reuben sandwich
corn beef sliced thick from your butcher
dark russian rye bread from your baker
course grain mustard [non- sweeten] you want the good stuff
1 red onion, 1 yellow onion, 1 white onion, 1 glove garlic and sauteed in small amount of olive oil.
when the onions soften together add some white wine and let simmer for a few minutes and remove from heat
add caraway seeds to onion mixture
clip fresh tarragon from garden and add to onion mixture
grind fresh crack of pepper and/or salt as to taste
spread mustard over both sides of bread
danish blue cheese grumbled over mustard
layer thick slices of corned beef on both slices of bread
top one side with onion mixture
close sandwich and garnish with a few polskie ogórki
suggestion: heat in cast iron fry pan like a cheese sandwich or under broiler until cheese melts

[buy flank steak pre-corned uncooked. slow simmer until perfect. add some keens hot mustard to course seeded mustard for some edge. stilton cheese will do as well. place sandwich in panini press. garnish with pickled vegetable and side with a russian vodka caesar]
